10 Minutes Cook Clam

I like clam,Clam is not only delicious, but it also has lots of nutrition. It can balance blood fat, prevent cardiovascular and cerebrovascular diseases, treat asthma, and so on. Clam with thin shell contains lots of protein, iron, calcium, and other nutrition. It is the best to eat clam during March and August, because during these time clam is big and thick and delicious. There are many ways to eat clam. People live nearby the sea like to eat pickled clam. Wash off the sticky outside of the clam and get the water out of it. Then, put it into a container and add salt and Chinese wine, then seal the container and let it pickle for one week. After one week, you can eat it with several slices of garlic. This dish can reserve for a long time and smells very good.

Ingredients:

Clam – 1 lb
Green onion
Garlic – 4 slices
Chili – 2

Seasoning:

Chicken essence
Chinese wine
Sugar
Sesame oil
Chinese prickly ash water

Procedure:

 
1.  Prepare ingredients. Sink the clams in salty water for half-a-day because it contains dirt. Then, wash them thoroughly.

2.  Boil water in the pot, and then add one spoon of Chinese wine. Put in cleaned clam, but take it out right after you put it in.

3.  Prepare other ingredients. Chop the green onion and chili. Grind the garlic.
4.  Add some oil in the pot, and then add grinded garlic and green onion. Fry.

5.  Add in clam and chili. Fry again.

6.  Fry until you can smell the flavor. Then, pour in one bowl of Chinese prickly ash water, chicken essence, and some salt. Turn the stove to small heat and stew.

7.  Stew until the clam soup turns a little white. Pour in Chinese wine and sesame oil. Stew two more minutes, and then turn off the heat.

8.  Enjoy with some wine, it's the most wanted in summer!






Sweet Smoked Meat Roll


I am not a vegetarian, I like meat, and there are many ways to cook meat. I would like to teach you how to make a sweet meat roll with bean-curd.

Suitable people:

1.  Normal healthy people and unhealthy people can eat this dish. However, if you eat too much and gain too many calories will cause obesity and cause more diseases. Eat too hot or cold food will cause stomachache and diarrhea. People who has stroke and high blood-pressure should not eat fat.

2.  Suitable for weak, old people and people who have malnutrition.

3.  Not suitable for people who are not good with pork.

4.  Pork skin and pork feet have effects for beauty and skin. Women who like to improve their look can eat pork skin and feet.

Appropriate cooking and eating:

1. There are many ways to cook and eat pork. From nutrition and health protection’s purpose, it is better to stew, boil and steam than to fry and bake. Under the high temperature of fry and bake, the protein of the meat will become chemicals that will cause cancer, so it is better to avoid frying and baking especially over-cooked meat. Meat that is cooked thoroughly is easier to digest, and protein will dissolve in the soup making the soup delicious and healthy.

2.  Do not use hot water to wash the pork before cooking, because it will lose some nutrition and make the flavor bad. Pork should be thoroughly cooked, since pork sometimes contains parasite.

3.  Pork belongs to acid food category. To balance it, you can add some beans and vegetables when cooking.

4.  Food that will conflict: you should not eat pork with plum, shrimp, almond, coriander, buckwheat, and beef.

Food contradiction:

1.  Do not drink milk with lean meat, because there is a lot of calcium in milk and phosphorus in lean meat. Body cannot absorb both at the same time.

2.  Do not drink tea after eating pork, because tannic acid in tea will make digestion slow causing to absorb poisonous and cancerous materials and causing health problems.

Ingredients:
  • Grounded pork – 1/2 lb
  • Bean curd 
  • Green onion
  • Ginger
  • Garlic
Seasonings:
  • Brown sugar – 2 teaspoons
  • Salt – 1 teaspoon
  • Soy sause – 2 tablespoons
  • Oyster sauce – 1 teaspoon
  • Sesame oil – 1 teaspoon
Procedure:




1.  Prepare materials. Ground the pork then add in green onion, ginger, garlic, sesame oil, oyster oil, then mix them.

2.  Boil bean curd so that it’s soft.

3.  Spread out the bean curd shin. Put a layer of grounded pork on it.

4.   Roll the bean curd clockwise into a roll.

5.   Boil hot water in the pater. Put the meat roll inside and steam for 25 minutes.

6.   Steamed meat roll is clear. Let it cool down.
7.  Put aluminum paper in the pot, sprinkle the brown sugar on it. Turn the stove to low fire.

8.   Put the meat roll inside and then close the lid for 2-3 minutes.

9.   Separately, add brown sugar into soy sauce to make the sweet sauce.
10.   Brush a layer of sauce on the meat roll.

11.   Close the lid again.

12.  After cooking, cool down the meat roll then cut it into pieces.




Green Tea Cakes


Green tea is a very popular flavor, it's light scent and light green color give people impressive feel. We have green tea ice cream, green tea cheese cake, green tea flavored chips, and almost many delicious have green tea flavor. These days are very hot, I decided to make some desserts to make people feeling cooler.

Ingredients:

  • Egg x2
  • 6 in. cake mould
  • Low-gluten flour 30g
  • Green tea powder 5g
  • Milk 16g
  • Sugar 36g
  • Almonds
  • Cherries
Procedure:

1. Prepare low-gluten flour, green tea powder, sugar, and milk.

2. Separate egg yolk and egg white.

3. Add 24g sugar into egg white, but separately put it in 3 times.


4. Add in sugar for the first time and mix until white bubbles come out.

5. Add in sugar for the second time. When you pull out the mixer, and you can see the curly tips on the egg white, it means that it is almost mixed but not quite.

6. Add in sugar for the third time. Continue mixing. When you pull out the mixer, and you can see the straight tip of the egg white, it is done. Put it into the freezer.
7. Mix the egg yolk. Add in 12g of sugar. Continue mixing but watch out for bubbles.

8. Mix milk and vegetable oil.

9. Mix the mixed milk and vegetable oil with egg yolk.


10. Pour that into a big bowl. There shouldn’t have any water or oil.

11. Use the griddle to put flour in the bowl.

12. Use erasing knife to mix from bottom to top. Do not mix in a circle.

13. Mix until it’s even.

14. Put the egg white into the egg yolk separately for 3 times, and mix evenly.

15. Reserve the mixed panada.
16. Use the griddle to put in green tea powder.

17. Mix evenly until it becomes green tea panada.

18. Put aluminum paper inside the mould. Pour in green tea panada.
19. Put in the middle of the oven. Use top and bottom heat to heat for 18 minutes at 175 degree.

20. The oven needs to preheat first. Preheat for 2 minutes.

21. Begin baking.
22. Take out the baked green tea cake from the mould.

23. Use heart shaped mould to make heart shaped cakes. 6in. cake can make 6 hearts.

24. Put some whipped cream on the cake.
25. Put a layer of almonds.

26. Put another layer of whipped cream, and then put a layer of cake.

27. Put another layer of whipped cream. Add on the cherry. Done.

Double-layer Milk Custard


Have you ever heard of double-layer milk custard?  It is a famous dessert from Guandong province, China. It's a must have in summer. Now let me give you some information of it.

Nutrition Fact:
     Contains protein, balances potassium-sodium rate, clears edema, supports immune system, lowers blood pressure, and buffers anaemia. Good for children's growth.
     Contains calcium that is essential for bone development that affects height, regulate enzyme activity, involves in muscualr and nerval activity, balances hormone secretion, regulates rhythm of the heart, controls infection and anaemia, and maintains the balance of acid-base.
     Contains phosphorus, promotes growth and tissues' repairment, and supplies energy.

Suitable for:
      Slim, low immunity, bad memorization, anaemia, and edema related people.
      Anorexia, dietry bias, insomnia, wakefulness, easily sicken, fine hair, slow nerval development, learning to walk, growing teeth late and not in good order, and unregular stomachache and diarrhea related children.
      
Dietetic therapy for:

        4. Advancing immune system
        5. Stengthen bone

Ingredients:
  •  Milk 250ml x2
  •  Egg x2
  •  Sugar 4 spoons
  •  Almond 1 spoon
  •  Raisin 1 spoon
  •  Cherry x2
Procedure:


1. Prepare materials, egg, bowl, and milk.

2. Heat up milk in the pot.Prevent it from bubbling.

3. Add in 2 spoons of sugar. Stir continuously until the milk is heated.



4. Pour heated milk into a bowl to cool down. Wait until there is a layer floating.

5. Separate egg yolk and egg white. Add sugar into the egg white 3 times separately.

6. Stir in one direction. Let sugar even mixed with egg white.

 
7. Let the mixed egg white rest and sink for 10 minutes. 

8. Poke a little hole on the side of the floating layer of the cooled-down milk, so it's easier to pour out.

9. Pour out the milk, leave the floating layer in the bowl.

 
10. Mix the milk and egg white evenly.

11. Use the griddle to filter the milk 2-3 times.

12. Pour filtered milk into a bowl for steaming.


13. Let the milk rest and sink for 10 minutes. Cover with preservative film. Poke 3 holes with toothpick.

14. Steam for 15 minutes. Let it cool and then take off the preservative film.

15. Sprinkle almond, raisin, and cherry on top. Enjoy! (You may also put it into freezer for awhile, so it's cool.)

Raisin Walnut Bread

As I mentioned in my previous post, my father likes to make bread. He likes to add raisin and walnut, because he thinks we should eat more healthy.


Ingredients:
  • Low-gluten flour 500grams
  • Sugar 20grams
  • Salt 8grams
  • Yeast 3grams
  • Water 300ml
  • Walnut 50grams
  • Raisin 100grams
Procedures:


1. Pour water into the flour. Mix with sugar, salt, and yeast until the surface is smooth. Add in walnut and raisin.



2. Ferment the bread at the temperature of 28℃ for 40 minutes.

3. Roll the bread dough until it's round, then put it into the oven plate.



4. Sprinkle some flour evenly on the bread.


5. Cut the surfaces to the pattern you want.

6. Pur into the oven at the temperature of 220℃ for 45minutes.




Szechuan (Sichuan) Dumplings In Chili Oil

Live in California especially Bay Area, I believe everyone has tried some Chinese food. Dumpling is a very famous one, some people like to eat dumplings by dipping the spicy sauce. Spicy is one of the most important elements of Chinese food, and Szechuan is well-known as its spicy food. Today I would like to introduce you guys how to make Chinese dumplings with chili oil. 


According to Wikipedia, Szechuan cuisine often contains food preserved through picklingsalting, and drying and is generally spicy due to heavy application of chili oil. The Sichuan peppercorn huājiāo 花椒 ('flower pepper') is commonly used. Szechuan pepper has an intensely fragrant, citrus-like flavour and produces a "tingly-numbing" (Chinese: ) sensation in the mouth. Also common are garlicchili peppersgingerstar anise and other spicy herbs, plants and spices.

Ingredients:
  • Dumpling Dough
  • 2 cups all purpose flour
  • 1 cup boiling water
         Filling:
  • 8 ounces celery cabbage (Napa cabbage)
  • 3 tsp salt, divided
  • 1 pound lean ground pork
  • 1/4 cup finely chopped green onions, with tops
  • 1 TB white wine
  • 1 tsp cornstarch
  • 2 tsp vegetable oil
  • Dash white pepper
  • some Sichuan peppercorn

Preparation:


1. Add vegetable oil into the pot. When the oil is still cold, add Sichuan 
 peppercorn and crushed pepper.

2. After frying, pour into a bowl.

3. Use a grinder to grind again.
 

4. Add vegetable oil agian.

5. Add in grinded Sichuan peppercorn and pepper to the cool oil.

6. After mixing, add some salt, spicies, and sesame. Mix.

 7. Prepare dumpling's filling materials. Mix ground pork, green onion, ginger,   and cabbage. The dumpling's skin was aleady made.

8-9.  Stir everything plus salt, soy sauce, white wine, and sesame oil. Make sure stir in  the same direction until the material is sticky.

10. Put the filling in the middle of the dumpling skin.(Not too much)

11. First hold between the fingers.

12. From the side, pinch once.

13-15. Continue pinching until it's fully closed.

 16. Turn on the stove to low fire. Put the made dumplings into the pot. Cook until the botton turns golden.

17. Add in water until the dumplings are half in the water.

18. Close the lid for 5 minutes. Fry until the water is gone. Use a small brush to brush a little bit of oil on the dumplings. Sprinkle some chopped green onion and sesame. Cook one more minute.

Last step: Take out the dumplings. Add some vineger into the chilli oil we made before, and enjoy!




I found some pictures from the internet showing how foreigners make the dumplings. The way they make it looks interesting. If you ate egg puffs before, you should notice that they are using the egg puffs mould to make these dumplings.
